Frozen strawberries blended with creamy coconut milk then sprinkled with a variety of toppings…Ah…this is the life!!

I know I’m not the only one who has heard of the famous acai bowl.  For whatever reason, these smoothie bowls are pretty famous…they are right up there with fidget spinners!  If you haven’t heard of the fidget spinner, all you have to do is walk into just about any store and they are being sold.  It’s the “fad” at this point, and like most fads, it will come to an end.  I’m sorta hoping the smoothie bowls don’t come to an end though!  They all look rather amazing.  So colorful, so versatile and so delicious!

I had been searching in my local grocery stores for frozen acai to make a smoothie bowl, but alas, it was nowhere to be found.  So I ventured into a different direction and this is what I came up with…something creamy and smooth, full of yummy flavors and it was super simple!

Coconut in itself is amazing, but coconut milk is just as good and very beneficial in many ways!  One of my favorite resources is Dr Axe.  If you’d like to read more about the goodness of coconut milk, just click here!!

I added strawberries to my bowl, but you could add a mixture of berries…just be sure to keep the blueberries at 1/2 cup.

Then there’s the toppings!!  I love adding an assortment of toppings to my bowl.  It’s so fun and colorful…plus each flavor makes the entire bowl so delicious altogether.   You can use whatever toppings you’d like as long as it stays in S fuel (for you Trim Healthy Mama’s).  I used almond slices, a few blueberries, unsweetened coconut flakes, chia seeds and cacao nibs.  Mmmm!!!!  So good…is your mouth watering yet?

Keep in mind that this whole recipe is 2 servings!  It’s tempting to eat the whole thing at once, but it does make quite a bit and you’ll make a friend for life if you share it! 🙂

  1. Blend all ingredients in your blender, except the toppings. My favorite blender of all is the Blendtec Total Blender !
  2. Pour in two separate bowls.
  3. Top with sprinkles of your favorite toppings, or just eat plain!
